    Blueberry Crumb Cake

    Don’t have a mixer? No worries! All you need is a bowl and spoon for this recipe 🙂 Blueberries make it sweet and tart at the same time, while the crumb topping gives it an extra layer of texture. Perfect for dessert or as a coffee cake. You’ve got to try it!

    Ingredients

    • Cake batter
    • 2 ¼ all-purpose flour

    • ¾ cup sugar

    • 1 ½ teaspoon baking powder

    • ¾ cup plain yogurt

    • 3 eggs

    • ¾ cup canola oil

    • 1 teaspoon vanilla extract

    • 1 pint blueberries – around 12 oz

    • Crumb Topping
    • 1 tsbp sugar

    • 1 tablespoon butter

    • 2 tablespoon flours

    Directions

    • Preheat your oven to 360 degrees F and line a 9×13 baking pan with parchment paper.
    • In a large bowl, combine the dry ingredients – flour, sugar, baking powder. Add yogurt, eggs, oil and vanilla and stir until combined.
    • Prepare the crumb topping in a seperate bowl. Combine flour, sugar and COLD butter. You can use a dough blender or your fingers to do this. Combine well, but make sure pea sized pieces of butter are still visible.
    • Pour the batter into the baking pan and top with the blueberries and crumb topping.
    • Bake for about 45-55 minutes. A dry toothpick is usually a good sign that your cake is done.
    • Sprinkle with powdered sugar and enjoy 🙂

    Notes

    • Fresh or frozen bueberries will work, just remember not to thaw them out before baking (don’t want them getting all soggy…).
