Do you ever crave something, but then have your conscience kick in and try to tell you to go the “healthier” route? If you’re like me, then that happens on a daily basis 😉
Ryan and I are both pizza lovers, but we also try to keep it healthier and more nutritious when possible. That’s why this alternative pizza dish quickly became a staple in our house. You get the satisfaction of all your favorite toppings, while knowing you had a nice portion of veggies at the same time. Sounds like a good idea, doesn’t it?
Cauliflower Pizza Casserole

1 large cauliflower (cut into small florets)
1-2 tablespoon olive oil
1 teaspoon salt
1 teaspoon garlic powder
2 cups marinara sauce
8 oz shredded mozzarella cheese

black olives
pepperoni
basil
Directions
- Preheat oven to 410 degrees F.
- In a 9×13 casserole dish, combine cauliflower florets, olive oil, salt and garlic powder. Spread evenly and roast for about 25 minutes.
- When it is finished pre-baking, pour the marinara sauce evenly over the cauliflower. Sprinkle with mozzarella and add your favorite toppings. Place back in the oven and bake for another 12 minutes. If you’d like the top of your casserole to become more golden brown, you can broil it for another 3 minutes (just make sure you keep an eye on it, because that broiler sure does work fast!).
