Layered Creamy Jell-o Cups – Labor Day Edition

    by Leave a Comment

This dessert reminds me of my aunt Zosia 🙂 She always made a creamy jello cake called “ptasie mleczko”, which translates to bird’s milk. It was always smooth, sweet and fluffy like a cloud.

So, this Labor Day I decided to make a red, white and blue version and serve it in cups topped with whipped cream, raspberries and blueberries! Turned out to be the perfect dessert for a hot, sunny day 🙂

    Ingredients

    • 1 can sweetened condensed milk

    • 1 3oz package raspberry Jell-o

    • 1 3oz package berry blue Jell-o

    • 2 envelopes unflavored gelatine (0.5 oz in total)

    • ½ cup cold water

    • 4 cups boiling water

    • whipped cream

    • ½ pint blueberries

    • 1 6oz pack of raspberries

    Directions

    • Using an electric mixer, whisk the condensed milk on high speed for about 5 minutes. It will become lighter in color and when done it will measure about 1 ½ cups.
    • Red layer
    • Mix raspberry Jell-o packet with 1 ½ cups boiling water and let cool down to room temperature.
    • When completely cool, add ½ cup of the whisked sweetened condensed milk.
    • Place cups in an egg container slanted and pour ⅓ cup of the rasperry mixture into each. Throw in 3-4 raspberries (optional). Refrigerate until set, about 15 minutes.
    • White layer
    • Sprinkle gelatine over ½ cup cool water and let stand 1 min.
    • Add 1 cup boiling water and stir until the gelatine is completely dissolved. Let cool down to room temperature.
    • When completely cool, add ½ cup of the whisked sweetened condensed milk.
    • Once the raspberry layer is set, gently pour ⅓ cup of the white mixture on top of the first layer. Refrigerate until set, about 15 minutes.
    • Blue layer
    • Mix berry blue Jell-o packet with 1 ½ cups boiling water and let cool down to room temperature.
    • When completely cool, add ½ cup of the whisked sweetened condensed milk.
    • Once the white layer is set, gently pour ⅓ cup of the blue mixture on top of the second layer. Throw in a couple blueberries (optional). Refrigerate until set, about 15 minutes.
    • Top with whipped cream, raspberries and blueberries. Enjoy 🙂
