What can be better than starting your day with a plate full of fluffy mini pancakes bursting with juicy blueberries?! Top with some almonds and maple syrup and you’ll be ready to take on the world!

Mini Yogurt Blueberry Pancakes

- Mini Pancakes
1 cup vanilla yogurt
2 eggs
1 cup all-purpose flour
2 teaspoon baking powder
1 teaspoon cinnamon
1 tablespoon sugar
½ pint blueberries
- Toppings
blueberries
sliced almonds
powdered sugar
maple syrup
Directions
- Mix the yogurt and eggs in a large bowl.
- Add the dry ingredients (flour, baking powder, sugar and cinnamon) into the same bowl and mix together until well combined.
- Heat a non-stick pan over medium heat. You can use non-stick spray or butter.
- Use a cookie scoop to measure out each pancake. Drop the blueberries on top once the batter is on the pan. Cook for about 2 ½ – 3 minutes (until bubbles start appearing on top of each pancake).
- Flip and cook on the other side for another 1 ½ – 2 minutes.
- Make sure to wipe your pan clean in between batches.
- Sprinkle with your favorite toppings and enjoy! 🙂
