Crunchy, creamy and delicious at the same time! This recipe reminds me of summer, but truthfully it’s a dish I love so much that I make it year round! Honeycrisp apples are my absolute variety, but you can use any kind of apple you’d like. Granny Smith is another great option to add a little more tartness.
Pea Salad with Apple

Ingredients
3 cups peas (thawed if using frozen)
1 apple, cored and diced
½ cup cooked and chopped bacon
1 cup shredded Cheddar cheese
½ cup red onion chopped
⅓ cup mayo
1 teaspoon lemon juice
salt and pepper to taste
Directions
- Combine peas, apple, bacon, cheese, red onion and lemon juice in a bowl.
- Gently fold in the mayo and season with salt and pepper to taste.
