Polish Chilled Beet Soup

Ingredients
1 lb beets
4 cups vegetable broth
1 tablespoon lemon juice
2 cups plain yogurt
5 – 8 radishes (depending on size)
¼ cup chopped green onion
2 tablespoon fresh chopped dill
salt and pepper to taste
4 boiled eggs (optional)
Directions
- Peel and dice the beets. Place in a pot, pour in the vegetable broth and cook for about 10 minutes (until the beets feel tender when pierced with a fork). Set aside until completely cool.
- Once cooled, add yogurt, lemon juice, vinegar. Season with salt and pepper to taste. Add sliced radishes and green onion, stir gently. Chill for at least 30 minutes.
- Pour into serving bowls and sprinkle with fresh dill.
