    Polish Chilled Beet Soup

    The beautiful fuschia color of this classic Polish soup is the first indicator that this will be an unforgettable experience! The creaminess combined with the crunchy texture of the radishes and green onion make it the perfectly refreshing meal!

    You might want to consider wearing gloves while handling the beets, unless you don’t mind pink hands 😉

    Ingredients

    • 1 lb beets

    • 4 cups vegetable broth

    • 1 tablespoon lemon juice

    • 2 cups plain yogurt

    • 5 – 8 radishes (depending on size)

    • ¼ cup chopped green onion

    • 2 tablespoon fresh chopped dill

    • salt and pepper to taste

    • 4 boiled eggs (optional)

    Directions

    • Peel and dice the beets. Place in a pot, pour in the vegetable broth and cook for about 10 minutes (until the beets feel tender when pierced with a fork). Set aside until completely cool.
    • Once cooled, add yogurt, lemon juice, vinegar. Season with salt and pepper to taste. Add sliced radishes and green onion, stir gently. Chill for at least 30 minutes.
    • Pour into serving bowls and sprinkle with fresh dill.
    • Enjoy!

    Notes

    • This soup is often served with a hard boiled egg. The perfect way to add some protein to your meal!
