    Polish Knedle – Potato Plum Dumplings

    This dish reminds me of hot summer days in Poland. My mom would make dozens of these using baskets of fresh plums she just got at the farmers market. We’d have a line of family members and neighbors showing up at the door as soon as word spread 😉

    Knedle are usually served for dinner or supper in Poland, but they can also be served for lunch or even breakfast. That sweet and salty taste along with the multitude of textures of the various toppings make it a very unique dish. Something that you definitely have to try, if you haven’t thus far!

    Let’s talk about plums… traditionally, my mom would use the little sweet plums that are available in Poland at every farmers market in the summer. She would pit them and use one plum per dumpling. Living in Tennessee, I had a hard time finding them, so I use larger plums, pit them, cut into four and use a quarter plum per dumpling.

    Ingredients

    • Dumplings
    • 1 lb potatoes

    • 1 egg

    • ¾ cup all-purpose flour

    • 3 large plums

    • 1 tablespoon powdered sugar

    • 2 teaspoon cinnamon

    • Salt

    • Toppings
    • 2 tablespoon butter

    • 2 tablespoon panko breadcrumbs

    • ½ cup sour cream

    • 2 tablespoon sugar

    Directions

    • Knedle – Dumplings
    • Peel, dice and boil potatoes in salted water until tender. Drain, cool and mash.
    • In a bowl, combine cooled mashed potatoes, egg and flour. Work until a dough ball is formed (if the dough is sticky, add additional flour, a tablespoon at a time, until it easily peels off your hands).
    • Bring a pot of salted water to a slow boil.
    • Pit and quarter the large plums and mix with the powdered sugar and cinnamon.
    • Divide the dough into 12 pieces and pat each piece into a circle. Place a quarter plum on each circle and wrap the dough around the plum with your hands. Make sure all the edges are completely sealed.
    • Put the dumplings into the boiling water and cook for 6 minutes from the time they float up to the surface of the water.
    • Breadcrumb topping
    • Place a pan over medium heat and melt 2 tablespoon butter. Once the butter is completely melted and whiter in appearance, add the breadcrumbs. Cook for about 3-4 minutes, stirring frequently. You’re looking for the mixture to turn golden brown, so make sure not to burn (if your stove is extra hot, it may take less time, so make sure you’re observing the whole process).
    • Sweet Cream Topping
    • Mix sour cream with sugar. Done!
    • Once the knedle are cooked, top with the breadcrumbs and sweet cream. Enjoy 🙂
