This recipe will make cooking asparagus a real pleasure! Skip the pots and pans and oven roast this whole side dish in one easy step! The crisp asparagus, coupled with zesty cherry tomatoes and topped with some mozzarella, serve as an unbeatable combination of flavor that will make you keep coming back for more!

Roasted Asparagus with Cherry Tomatoes

1 lb fresh asparagus
15 cherry tomatoes
½ tablespoon olive oil
½ tablespoon Old Bay or Cajun seasoning
¼ cup mozzarella
Directions
- Preheat oven to 375 degrees F. Line baking sheet with parchment paper. Snap off the woody ends of the asparagus and discard. If you bend the asparagus near the end, it should snap in the right place.
- Place asparagus and cherry tomatoes on baking sheet, drizzle with olive oil and sprinkle with seasoning. Top with mozzarella.
- Bake for 14 – 18 minutes, depending on the thickness of the asparagus.

Notes
- We love to serve this side dish with our favorite oven baked lemon pepper salmon. Both dishes are ready at the same time. Sounds like a good plan, doesn’t it?!
