    Sausage, Egg and Cheese Breakfast Burrito

    With a lot of people working from home, this week I was asked to create a make in advance breakfast meal πŸ™‚ This EASY and QUICK recipe might just come in handy the days you’re in a hurry to log in for that first meeting of the day!

    Feel free to add your favorite veggies, additional meats or egg whites. Here’s a foundation for you to build on πŸ˜‰

    Sausage, Egg and Cheese Breakfast Burrito

    Ingredients

    • 1 pack 8 inch flour tortillas (10 tortillas)

    • 1 pack spinach (6-8 oz)

    • 10 eggs

    • 1 lb breakfast sausage

    • 8 oz shredded cheese (I used triple cheddar in the video)

    • 4 tablespoon butter

    • Salt and pepper to taste

    Directions

    • Cook breakfast sausage until no longer pink.
    • Scramble eggs with added salt and pepper to taste.
    • Place a tortilla on a flat surface, add a handful of spinach, spoonful of cooked breakfast sausage and spoonful of scrambled eggs. Top with shredded cheese and roll like a burrito.
    • In a pan, melt 1 tablespoon of butter over medium/medium high heat. Place tortillas in the pan and fry for about 2 minutes (until golden brown) on each side. Wipe your pan clean with a paper towel after every batch.
    • Add guacamole, tomatoes and green onions as a side.

    Notes

    • These breakfast burritos freeze very well. All you need to do is individually wrap them in freezer paper and place in a ziplock bag. When ready, microwave for about 3-4 minutes and enjoy πŸ™‚
