    Sheet Pan Shrimp Fajitas

    If you’re looking for something quick and easy to make for dinner, you’re in the right place! These shrimp fajitas are incredibly tender and juicy. They taste amazing, they’re healthy and they’ll be ready in no time! So how does dinner in 20 minutes sound? 🙂

    Ingredients

    • 1 lb shrimp (peeled and deveined)

    • 5 small peppers

    • 1 medium red onion

    • 1 peach

    • 1 lemon

    • 3 tablespoon olive oil

    • ½ tablespoon Old Bay seasoning

    • 1 teaspoon turmeric

    • 1 teaspoon sweet pepper powder

    • 5 jalapenos (optional)

    • Side ideas:
    • rice

    • tortillas

    • pico de gallo

    • guacamole

    • sour cream

    Directions

    • Preheat oven to 450 degrees F and coat your sheet pan with non-stick spray.
    • Slice the peach, onion and peppers into similar size chunks and place into a bowl. Add the shrimp, sprinkle all the spices, add olive oil and juice from half the lemon. Gently mix until well combined.
    • Evenly spread on the baking sheet with wedges of the remaining half lemon and bake for 8-10 minutes.
    • Serve with rice or tortillas along with your favorite toppings. Enjoy 🙂

    Notes

    • You’ll know when the shrimp is ready when it turns pink and is no longer translucent. Keep an eye on it to avoid overcooking 🙂
