Sheet Pan Shrimp Fajitas

1 lb shrimp (peeled and deveined)
5 small peppers
1 medium red onion
1 peach
1 lemon
3 tablespoon olive oil
Β½ tablespoon Old Bay seasoning
1 teaspoon turmeric
1 teaspoon sweet pepper powder
5 jalapenos (optional)

Directions
- Preheat oven to 450 degrees F and coat your sheet pan with non-stick spray.
- Slice the peach, onion and peppers into similar size chunks and place into a bowl. Add the shrimp, sprinkle all the spices, add olive oil and juice from half the lemon. Gently mix until well combined.
- Evenly spread on the baking sheet with wedges of the remaining half lemon and bake for 8-10 minutes.
- Serve with rice or tortillas along with your favorite toppings. Enjoy π
Notes
- You’ll know when the shrimp is ready when it turns pink and is no longer translucent. Keep an eye on it to avoid overcooking π
