* You can give them a gentle rinse right before you are going to use them
* You can gently brush them off with paper towels
* You can peel them
Ingredients
4 large portabella mushrooms
6 oz sausage (I used breakfast sausage)
1 egg
â…“ cup breadcrumbs
½ cup mozzarella cheese + 2 tablespoon for topping
2 tablespoon chopped parsley
1 teaspoon salt
1 teaspoon black pepper
Directions
- Cook the sausage on the stovetop until brown and no longer visibly pink. Preheat oven to 350 degrees F.
- De-stem and gently scrape the gills out of the mushrooms. Make sure you are as gentle as possible, not to break the mushroom cap.
- Place the gills and chopped stems in a medium bowl. Add cooked sausage, parsley, cheese, egg, breadcrumbs, salt and pepper and mix until well combined.
- Place the mushrooms on a lined baking sheet, add filling and top with additional cheese. Bake for 17-20 minutes, until mushrooms are done and cheese is melted.
- Enjoy! 🙂
