    Turkey Veggie Quinoa Bowl

    Protein packed power bowl that can be served for any meal of the day! Don’t like one or more of the veggies? Not a problem! Grab your favorite crunchy veggie or a fried egg on the side and make it your own. Added red onions, scallions or even apples work great!

    Ingredients

    • 1 lb ground turkey

    • 1 cup tri-color quinoa

    • 1 avocado

    • 1 English cucumber

    • 7 mini peppers

    • 20 cherry tomatoes

    • 1 jalapeno (optional)

    • ⅔ cup olive oil

    • 1 tablespoon garlic powder

    • 1 tablespoon oregano

    • ⅓ cup white wine vinegar

    • salt and pepper to taste

    Directions

    • Clean quinoa by running it under cold water until the water runs clean. Cook according to instructions.
    • Heat up your pan on medium/medium high heat with a drizzle of olive oil. Add ground turkey and cook until no longer pink. Season with salt and pepper to taste.
    • Dice up the avocado, peppers and cucumber. Cut the cherry tomatoes into halves.
    • Pour olive oil and white wine vinegar into a measuring cup. Add garlic powder and oregano. Whisk until well combined.
    • Place quinoa, turkey and veggies into large bowl. Drizzle with dressing. Enjoy 🙂
