Protein packed power bowl that can be served for any meal of the day! Don’t like one or more of the veggies? Not a problem! Grab your favorite crunchy veggie or a fried egg on the side and make it your own. Added red onions, scallions or even apples work great!
Turkey Veggie Quinoa Bowl

1 lb ground turkey
1 cup tri-color quinoa
1 avocado
1 English cucumber
7 mini peppers
20 cherry tomatoes
1 jalapeno (optional)
⅔ cup olive oil
1 tablespoon garlic powder
1 tablespoon oregano
⅓ cup white wine vinegar
salt and pepper to taste
Directions
- Clean quinoa by running it under cold water until the water runs clean. Cook according to instructions.
- Heat up your pan on medium/medium high heat with a drizzle of olive oil. Add ground turkey and cook until no longer pink. Season with salt and pepper to taste.
- Dice up the avocado, peppers and cucumber. Cut the cherry tomatoes into halves.
- Pour olive oil and white wine vinegar into a measuring cup. Add garlic powder and oregano. Whisk until well combined.
- Place quinoa, turkey and veggies into large bowl. Drizzle with dressing. Enjoy 🙂
