Ingredients
1 cup unsalted butter (2 sticks)
1 cup sugar
2 eggs
2 ½ cup all purpose flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla extract
1 ½ cup white chocolate chips
1 cup crushed peppermint candy canes
Directions
- In a large bowl, whisk together the flour, salt, baking powder and baking soda. Set aside.
- Using an electric mixer on medium/high spead, beat the sugar and butter until light colored and fluffy (about 5 minutes). Add one egg at a time followed by the vanilla extract. Scrape down the bowl when needed and mix until well combined.
- Slowly add in the flour and mix only until incorporated. Scrape down the bowl when needed.
- Add white chocolate chips and ¾ cup crushed candy cane, mix until evenly spread.
- Using a cookie scoop, place cookie dough on parchment lined cookie sheet (about a 2 tablespoon portion). Dip the top of each ball into remaining ¼ cup crushed candy cane.
- Preheat oven to 350 degrees F. In the meantime, chill the cookies in the fridge (about 5 -10 minutes, which is about the same time it will take your oven to preheat).
- Bake for 8-10 minutes, until edges are slightly golden.
- Allow to cool on cookie sheet for 3-4 minutes and tranfer to a cooling rack.
- Enjoy! Remember to leave some for Santa!!
Notes
- Keep an eye on the first batch of cookies, as each oven is slightly different. Take you cookies out when the edges are slightly golden. The recommended time is 8-10 minutes, but it might take a few minutes longer.
