    White Chocolate Candy Cane Cookies

    For best results, make sure the butter and eggs are at room temperature. And remember, the secret to wonderful cookies is beating the butter and sugar for a few minutes, until fluffy and light colored and not overmixing once you add the dry ingredients.

    Ingredients

    • 1 cup unsalted butter (2 sticks)

    • 1 cup sugar

    • 2 eggs

    • 2 ½ cup all purpose flour

    • 1 teaspoon salt

    • 1 teaspoon baking powder

    • 1 teaspoon baking soda

    • 1 teaspoon vanilla extract

    • 1 ½ cup white chocolate chips

    • 1 cup crushed peppermint candy canes

    Directions

    • In a large bowl, whisk together the flour, salt, baking powder and baking soda. Set aside.
    • Using an electric mixer on medium/high spead, beat the sugar and butter until light colored and fluffy (about 5 minutes). Add one egg at a time followed by the vanilla extract. Scrape down the bowl when needed and mix until well combined.
    • Slowly add in the flour and mix only until incorporated. Scrape down the bowl when needed.
    • Add white chocolate chips and ¾ cup crushed candy cane, mix until evenly spread.
    • Using a cookie scoop, place cookie dough on parchment lined cookie sheet (about a 2 tablespoon portion). Dip the top of each ball into remaining ¼ cup crushed candy cane.

    • Preheat oven to 350 degrees F. In the meantime, chill the cookies in the fridge (about 5 -10 minutes, which is about the same time it will take your oven to preheat).
    • Bake for 8-10 minutes, until edges are slightly golden.
    • Allow to cool on cookie sheet for 3-4 minutes and tranfer to a cooling rack.
    • Enjoy! Remember to leave some for Santa!!

    Notes

    • Keep an eye on the first batch of cookies, as each oven is slightly different. Take you cookies out when the edges are slightly golden. The recommended time is 8-10 minutes, but it might take a few minutes longer.
